Bacon and Broccoli Frittata

We go through dozens of eggs each week in our house.  Todd, Davis, and I all love them.  Todd’s younger brother is also currently living with us, and eggs are a perfect, inexpensive meal for a group of boys. :)  I do buy my eggs from a local farm.  If you are not able to do this, at least look for cage-free, organic eggs. 

This past Friday I made two types of frittatas for us to enjoy throughout the weekend.

Bacon and Broccoli Frittata is a mix between indulgent and healthy.  I’ve found that Davis will eat almost any vegetable if it is mixed in with eggs, although he does love broccoli any time.

This isn’t technically a frittata, but more like an egg casserole.  It could be made using the frittata method – starting on the stove and finishing in the oven.  That would probably even make it taste better!  I treated mine more like a crustless-quiche.

Bacon and Broccoli Frittata

  • 1 1/2 c steamed broccoli, chopped small
  • 6 slices cooked bacon, chopped (could also use turkey bacon)
  • 8 eggs
  • 2/3 c unsweetened coconut milk
  • salt and pepper
  • 1 Tbsp bacon grease (optional)
  • 1/2 c (or more) sharp white cheddar cheese, grated

Preheat oven to 350 degrees.

Scramble together the eggs, coconut milk, and bacon grease (if using) in a medium size bowl.

Grease a deep pie dish.

Place the broccoli, half the bacon, and half of the cheese in the pie dish.  Slowly pour the eggs into the dish, trying to keep the broccoli and bacon even throughout.

Add the remaining bacon and cheese.

Bake for around 30 minutes.  If you use a larger, more shallow pan, the cooking time will be reduced.  



Fall Fashion: Recent Outfits

Every few days, when I actually wear real clothes instead of gym clothes ;), I have been taking pictures of my outfits.  My purpose in sharing them is to show you:

1) How I “shop” my closet

2) Where to find the same, or similar, inexpensive items for yourself.

I certainly do not claim to be a fashion blogger!  But I do know that it is easy to get into a dressing rut, and I thought I could help!  Plus this challenges me to continually shop my closet and try new combinations.  I am not one to go on a shopping spree, but I will pick up a new item here and there.  My favorite, easy, inexpensive go-tos are Marshall’s, LOFT, and Forever 21, but I also love shopping online through Asos.  And I do shop at Nordstrom occasionally.  Another idea is to use Ebates!  It is basically like getting paid to shop online – seriously.

Friday Favorites

Happy Fall, girls!  Here’s to cooler weather, leaves falling, and pumpkin spice ev-er-y-thing!

I haven’t blogged as much as I intended to this week, so today’s post is chock-full.

TWO: Gold christmas lights!  I bet most of you have already seen this on Pinterest, but I had to share again.  I think it’s quite genius.  With our new house, we’re making a new Christmas decorating plan, and I just may have to incorporate this DIY project.

If you’re not as into DIY, here are a couple of options for gold string lights that you can purchase.

THREE: Our oven has been broken for almost a month.  We can now use it sparingly, but it still isn’t 100%.  We’ve had to be quite creative with meals (especially because I cook every day).  Todd and I did discover the other night that you can grill enchiladas.  Who knew? He set the grill on a very low temperature, and we kept them covered with foil until the very end.  These are sweet potato and black bean enchiladas with pineapple salsa – delish! 


FOUR:  My outfit from our date night above Charlotte last weekend was different than clothes I typically wear.  I have had these wider-leg off white dress pants for at least 5 (maybe even 7?) years.  My blouse is from Asos last year, but I found another great option.  I wore my favorite Dolce Vita Nolin sandals, which I found on major sale (link below).

FIVE: Clearly I’m into gold today (no surprise there). ;)  I saw this makeup tutorial on Pinterest for a gold smoky eye.  I want to try this soon!

Date Night Above Charlotte

Let me just gush about my husband for a minute.  Seriously – he planned the most romantic, fancy date for our 9th anniversary!  I was blown away!  It was all “above” Charlotte.

We started with a helicopter ride over the city, which was amazing!  The flight was at 7 pm, and with the sun setting, the views were picturesque.  Charlotte is such a pretty place.

We rode with the doors off the helicopter, which certainly made for an adrenaline rush!  If you have a special occasion to celebrate, I’d highly recommend taking a helicopter ride.  We flew with Queen City Helicopters.

For the next part of our date, we ate dinner at Fahrenheit.  We had never been there, but we really enjoyed the restaurant!  The food and the servers were wonderful.  And more amazing views!

We were seated between two large groups of Texans fans who had flown in for the Panthers game the next day.  Let’s just say they were having a really good time.  They felt bad for being so loud, and ended up buying us dessert.

I love date nights with Todd.  I am incredibly blessed to be married to that man!

Fall Fashion: White Jeans + Navy Plaid

White jeans after Labor Day?  Is that even still a no-no?  In the South it has been almost 90 degrees, so I’d say, if it feels like summer, then summery clothes are acceptable!  I did, however, pair my white jeans with plaid and booties this past weekend, to transition from summer to fall.

Five on Friday

Looking at my calendar for this weekend is exciting!  It is going to be busy, but with fun celebrations…a baby shower at my house for a dear friend tomorrow, and a fancy date night for our anniversary!

FOUR: The weather this past weekend in Charlotte was simply amazing.  We spent plenty of time outside, and I even ran 3 miles without thinking twice.  The run did not even feel difficult!  I took Kenan for part of the run.  He’s getting older, but still keeps up with me (with plenty of encouragement). :)

Start of Preschool + Toddler Boy Gear

Our son started preschool for the first time last week!  So far, we love it, and he does as well.  He has amazing teachers, and I am so excited for what he will learn!

We arrive early, because the parking lot is very busy, so we typically have time in the car before walking in to read books and pray.  That time together on the first day was really special to me.  The night before his first day at school, I was very anxious, but I fully believe that this is where he needs to be this year.  That morning he was SO excited, and I felt reassured before walking him inside.  


I am believing big things for our son, and can’t wait to watch him grow! 


I also wanted to share some of our favorite preschool boy gear so far!  These shoes are great – I am tempted to buy them in the next size up as well.  We found his Camelbak cup at Target, and it comes in several patterns and colors.  The back pack is pricey, but he will use it for years, and for overnight trips.  It is large enough to hold diapers, wipes, folders, and his lunch box.  Also, with STATE bags, when you buy a bag, they give another one away to a child in need.  My parents gave him the lunch box and the bento box insert, and they’re great so far.  He didn’t eat much lunch at the beginning of school, but I’m hoping he’ll get more used to eating with a big group soon!
